HOW DO I MAKE SWEET JENNIFER’S JAMBALAYA?

RECIPE: SWEET JENNIFER’S JAMBALAYA

Ingredients:

  • 8 chicken thighs, skinned
  • 1 pound smoked sausage, sliced in quarter-inch slices
  • 3 tablespoons vegetable oil
  • ½ cup chopped green pepper
  • 1 cup chopped onion
  • 4 cloves garlic
  • 1 tablespoon salt plus pepper to taste
  • 1 teaspoon to 1 tablespoon (depending on taste) of Tony Chachere’s Creole Seasoning
  • ½ teaspoon thyme
  • 2 teaspoons Worcestershire sauce
  • 1 quart chicken broth
  • 1 cup tomato sauce
  • 2½ cups long grain rice

Preparation:

In a large Dutch oven, brown chicken thighs and sausage in oil. Remove meat; reduce heat and sauté veggies until onions are clear. Add seasonings, Worcestershire sauce, broth and tomato sauce. Simmer for about 15 minutes. Add meat and rice; stir well. Cover and cook over medium heat for about 30 minutes. You may have to add more water – possible half a cup to ensure rice is covered. Stir occasionally to prevent sticking. Cook an additional 20 minutes over very low heat. Serves 8.
