Ed give the history of how his family got into chilis.

Ed’s farm produces high quality seed for chilis.  Including Hatch, NM Home of Hatch chilis. But his focus is on genetics.  Creating a stable heat for a growing market.

Ed developed a pepper with mild heat, known as Arizona 20.  Its the standard for green and red chili in the US.

Ed goes deep into the science of ‘gene packages’ to develop various types of chilis.  And the placenta wall, the lining that gives the peppers heat.
