Desert Durum Wheat was nothing more than a rotation crop until plant breeders came in to improve it.  Eric talks about the chain of events to being used in some of the best pasta in the world!

The Arizona enviroment provides great conditions.  Except the wheat doesn’t like to get rained on.  Eric explains why.  How the color and strength is crucial to great pasta.
