RECIPE: ROSIE’S MAMA’S CORNBREAD DRESSING

Ingredients:

  • 1 cup celery, chopped
  • 1 cup onion, chopped
  • 1/2 cup chopped bell pepper
  • 1/2 stick butter
  • 2 tablespoons olive oil
  • 1 pound Jimmy Dean hot sausage
  • 1 pound full fat ground beef
  • Giblets from turkey chopped (optional)
  • One day-old 9-by-13 pan of cornbread (no sugar added) leave uncovered
  • Chicken broth to moisten (Swanson’s or homemade bone broth)
  • 1 cup toasted, chopped pecans — optional

Preparation:

Melt butter and olive oil in skillet. Sauté onion, bell pepper and celery until onions are translucent. Add all meat and brown. Drain off fat but leave 1/4 cup for flavor. Crumble all the cornbread into the pan. Add pecans. Moisten with chicken broth. Salt and pepper to taste. Place in covered casserole in oven at 250 degrees to keep moist and ready for dinner. This will taste even better on day two and three.
